MSA is the result of millions of dollars in research that identified the factors that affect eating quality. They include the age and breed of the cattle, feed quality and type, animal handling methods, processing conditions, type of cut, and cooking techniques.

This knowledge allows MSA to accurately predict how every cut of meat from an individual carcass will perform under a range of popular cooking methods.

Specially trained MSA Graders assess each individual carcass and allocate eating quality grades based on this world-leading science.

This grade information is passed along the supply chain so that butchers can provide customers with cuts of beef that suit the intended cooking method and occasion, every time.
